Mexican Skewers


What’s a quick warm weather meal to whip up quickly?  Delicious tofu skewers with onions and peppers.  A little spice to bring everything together, a few minutes of cook time and dinner is ready to go!  Add a side of beans, guacamole or yummy veggies.  Din din is done.   Oh yummy.


– 1 12oz. package of tofu, cubed;
– ¼ onion, quartered into large chunks;
– ½ red bell pepper, cut into large chunks;
-1 cup of cherry or grape tomatoes;
-spice rub: equal parts paprika, chile powder, black pepper, salt, cayenne pepper, cumin and sugar.


Mix all ingredients for spice rub.  Sprinkle generously on all sides of the cubed tofu.  Sprinkle spice rub over onions as well.  Take a wooden skewer and thread a tomato, followed by a piece of tofu, onion, red pepper, and repeat until you reach the end of the skewer.  Top off with tomato to secure.


Place skewers on griddle or grill cook on each side until charred.

Take off heat and serve with your favorite sides.
