It is iced coffee season.  Yes it is.  What a better way to celebrate then to prepare a special iced coffee treat.  This special treat includes lots of classic flavors.  Cajeta, a decadent goat’s milk caramel, is added to warm coffee.  Cocoa powder gets thrown in the mix because who says you can’t have caramel and chocolate together?  Yum.  The end result: A creamy, chocolaty, sweet, velvety iced coffee.  What a great way to sit back and relax. Arroz con Tofu

Arroz con Pollo is a pretty traditional Cuban dish.  It is a simple, one-pot meal of seasoned rice and sautéed chicken.  The dish is flavor, flavor, flavor.  The way I see it why does chicken get to have all the fun?  Tofu wants in on some of that action.

For this recipe tofu is seasoned lightly before being sautéed.  Then the rice gets royal treatment in the form of cumin, turmeric, salt and a little sofrito, which is a combo of onion, garlic and bell pepper.  The whole dish is topped with some olives and boom!  Arroz con tofu is created.  Tomatoey, salty, spice-filled goodness.  And the aroma…man the kitchen will smell delicious for hours after you are done.  Take that chicken! Huevos a la Mexicana

Huevos a la Mexicana are simple to make.  The traditional recipe calls for eggs, tomatoes, onions and jalapenos, scrambled together.  Nothing fancy just a hearty and fresh breakfast dish.  However, I decided to take it up a notch.  Incorporate a little more veg and a lot more flavor.  For starters I added some red bell pepper for sweetness and green chilies for tanginess.  Then I added some salsa to give it an extra kick.  Finally my secret weapon: always add spices to the beaten eggs.  Always.  The spices always make eggs taste better.  Not much to it and quick to make as well. Sonoran Hot Dogs

The novelty of the Sonoran-style hot dogs is the bacon.  Oh and the toppings.  The creativity that goes into the toppings is amazing.  You can go as basic as ketchup, mustard, relish or venture into guacamole, beans, grilled onions, mayo and pickled jalapenos.  Pick and choose and see what you like.

So legend has it the Sonoran hot dog was invented to help banish those late-night munchies associated with a great night out.  Vendors would line up the streets with mobilized griddles and cook up loads of bacon-wrapped hot dogs and grilled onions.  Hmmm. Continue reading

Strawberry and Peach Chia Pudding

Chia seeds have been around in Mexico and Central America for centuries.  The Mayans even included them in their diet.  And why not?  These crunchy little seeds add a lot to any diet.  They are rich in omega-3 fatty acids, are a great source of protein, fiber, antioxidants, and calcium.  Plus they do not have a distinctive flavor which means they can easily blend into any flavor you wish.

Seeing how these seeds expand in liquid to form a gel-like consistency I decided to make a vegan-friendly “rice pudding/tapioca” like dessert using chia seeds.  Once the chia seeds expand in the milk it creates this creamy consistency similar to that of rice pudding or tapioca.  I started with a vanilla based dessert then folded in some yummy summer fruit and voila!  A light dessert that is also healthy.  Score and score. Mushroom and Corn Tostadas

Picture this: a crispy, crunchy tortilla slathered with warm beans, then topped with earthy mushrooms, sweet corn and a little punch of heat.  A mountain of lettuce, tomato, cheese and cool yogurt gone on next and voila!  Mushroom and corn tostadas.  What a fantastic meal for a warm day.  These mushroom and corn tostadas are easy to make and are very satisfying.  You got flavor and you got texture making these tostadas delicious. Ensalada de Fruta

Not your typical fruit salad.  Anyone who has visited Mexico is familiar with the fruit carts that line the street.  Cups filled with fresh fruit, diced up and piled high.  Try to find something more refreshing than that!  Mexican-style fruit salad is a little unique as it adds some lemon juice, a little salt and chile pepper for a touch of heat to really help bring out the fruits sweetness.  You get this sweet, tart, salty, spicy bite that is quite tasty. Sopa de Azteca (Aztec Soup)

Sopa de Azteca, or Aztec Soup, is a very easy and tasty version of tortilla soup.  A simple tomato-based soup is topped with tortillas, avocado and a sprinkling of cheese.  All there is to it. The key is to have a well seasoned, tomatoey base for flavor.  Lots and lots of flavor.  The rest is pretty straightforward.  Nice, crispy tortilla chips (homemade or high-quality store-bought are best) add a good bite, the cool, creamy avocado lends this great flavor and brightness to the soup and of course the cotija cheese does what cotija cheese does best-gives the soup a tangy pop of flavor.  Yum yum.
