Not your typical fruit salad. Anyone who has visited Mexico is familiar with the fruit carts that line the street. Cups filled with fresh fruit, diced up and piled high. Try to find something more refreshing than that! Mexican-style fruit salad is a little unique as it adds some lemon juice, a little salt and chile pepper for a touch of heat to really help bring out the fruits sweetness. You get this sweet, tart, salty, spicy bite that is quite tasty.
The fruit flavor combos are endless but some of the most common fruits used are mango, jicama, orange, cucumber, pineapple, papaya, apple and watermelon. So yup, pretty much any fruit can be added. I decided to keep it pretty basic and picked some of the most refreshing fruits but get creative and find the flavor combos that work best for you.
WHAT YOU NEED:
– 1 large cucumber;
– 1 mango;
– 1 jicama;
– Juice of ¼- ½ a lemon;
-ground chile pepper (cayenne, chipotle, etc);
WHAT YOU DO:
Peel and cut cucumber, mango, jicama and orange into similar-size chunks (bite-size seems to work but a smaller dice works as well).
Toss fruit in a bowl with lemon, chile pepper and salt. Stir well and let sit for at least an hour but preferably overnight to help the flavors blend together.
