Junk Food Supreme: Colombian Hot Dogs

Late night junk food addicts rejoice.  In Colombia it is normal to scoop up a hot dog late at night to take care of the munchies.  And let’s face it-late night meals are not meant to be healthy.  They are meant to satisfy and keep you going.  You can always be good in the morning.
No one says hot dogs have to be healthy.  So these dogs get topped in a sweet pineapple sauce and a cool, creamy cole slaw.  The traditional ketchup and mustard is added next but then-mind blower.  Crushed up potato chips get added.  Yes. Crushed. Potato. Chips.  Uh-huh.  On top not as a side.  I mean how awesome right?  The end result is this sweet, tangy, creamy, salty, crunchy concoction that fills you up and gets you going to the early hours.

WHAT YOU NEED:

-8-10 vegetarian or vegan hot dogs;
-8-10 hot dog buns;
– ¼ cup of crushed potato chips (or as much as you can muster from the bottom of the bag);
-ketchup;
-mustard;
Pineapple Sauce:
-1 cup of pineapple, crushed (if using fresh pineapple, blend fresh pineapple with a little water in a blender until pureed);
– 1 teaspoon of corn starch;
– 1 teaspoon of sugar;
– ¼ cup of water;
Cole Slaw:
-1 small head of cabbage, shredded;
– 1-2 carrots, shredded
– ¾ cup of mayonnaise (vega mayo will work);
– ½ cup of plain yogurt
– 1 ½ tablespoons of sugar;
-2 tablespoons of white or apple cider vinegar;
-pepper;
-salt;

WHAT YOU DO:

For Pineapple Sauce: Mix corn starch in water until smooth.  Place pineapple and sugar in a small saucepan and heat over medium-high heat.  Add corn starch mixture and stir until thicken (about 10 minutes).  Turn off heat and let cool slightly.

For Cole Slaw: Combine mayonnaise, yogurt, sugar, vinegar, pepper and salt in a mixing bowl.  Toss in cabbage and carrots and stir until coated.  Place in refrigerator and let sit for at least 15 minutes for flavors to combine.

Heat hot dogs according to package directions.  Meanwhile, totally optional but worth it, toast buns in a toaster oven or in a nonstick skillet.  To assemble: Place hot dog in bun, top with pineapple sauce and cole slaw.  Next squeeze ketchup and mustard on top of cole slaw. Then take crushed potato chips and sprinkle on top of dog.  Attempt to eat without spilling anything.
