Potatoes-Can they do no harm? They are tasty, hearty, cheap, filling and did I mention tasty? Although there are many dishes that include potatoes I think one of my favorite ways to prepare them is in a simple soup. A warm bowl of soup. A steamy pot of earthy goodness. It is just really simple but really delicious. Just some potatoes and tomatoes. A few spices and voila! A masterpiece is created.
WHAT YOU NEED:
-2 potatoes, cubed;
-1 14.5oz. can of diced tomatoes;
-4 cups of vegetable stock or water (or mixture of both);
– 1 bay leaf;
– ½ teaspoon of cumin;
-1 teaspoon of curry powder (yes curry powder);
– ½ cup of crumbled cheese (cotija, queso fresco, feta, vegan cheese, etc.);
WHAT YOU DO:
In a medium saucepan cook potatoes with stock until potatoes are tender.
Add tomatoes, bay leaf, cumin, curry powder and salt.
Let simmer for about 5 minutes. Ladle soup into bowls and top with cheese. Enjoy.
