Huevos Divorciados


Huevos Divorciados or divorced eggs is a Mexican breakfast dish that is just too funny to not eat.  It consists of two fried eggs, side by side, separating (i.e. divorcing) the two different sauces.  Simple to make and simple to eat.  Fun to say as well.


-2 eggs;
Red Tomato Sauce;
Green Tomatillo Salsa;
– salt


Heat oil in a large saucepan over medium heat.  Slowly add eggs and fry until desired doneness (over easy, over medium, over hard).

Remove from pan and place on plate. Sprinkle with salt.

Pour red sauce over one of the eggs and green sauce over the other egg. There you go.
