“Huevos” Revueltos

Huevos revueltos, or scrambled eggs, make for a quick and easy breakfast meal.  Usually huevos revueltos are kept simple with eggs and some salt and pepper.  But why stop there?  I say add some veggies for flavor and color.  And while we are on the subject of flavor, chipotle peppers add a ton of flavor.

This recipe turns scrambled eggs into a vegan-friendly, spice-filled dish.  Skip the eggs and make it with tofu instead.  Add peppers, onions and tomatoes to really kick it up a notch.  So filling, so tasty, so incredible.  Patting myself on the back now. Continue reading

Spicy Red Chilaquiles

Sometimes the least complex dishes tend to be the tastiest.  A few simple, delicious ingredients is all it takes to make a great dish packed with flavor come to life.

Chilaquiles are a breakfast staple.  Smothered tortillas and eggs topped with cheese make for a scrumptious and hearty meal.  Sometimes a tangy green sauce is used but this time I am using a quick red tomato and chipotle sauce to soak the crispy tortillas in. Continue reading

Huevos Divorciados or divorced eggs is a Mexican breakfast dish that is just too funny to not eat.  It consists of two fried eggs, side by side, separating (i.e. divorcing) the two different sauces.  Simple to make and simple to eat.  Fun to say as well. Continue reading

Huevos a la Mexicana

Huevos a la Mexicana are simple to make.  The traditional recipe calls for eggs, tomatoes, onions and jalapenos, scrambled together.  Nothing fancy just a hearty and fresh breakfast dish.  However, I decided to take it up a notch.  Incorporate a little more veg and a lot more flavor.  For starters I added some red bell pepper for sweetness and green chilies for tanginess.  Then I added some salsa to give it an extra kick.  Finally my secret weapon: always add spices to the beaten eggs.  Always.  The spices always make eggs taste better.  Not much to it and quick to make as well. Chorizo Hash

When all you want to eat is a plate full of comforting, magnificent vegetables all you need to do is make hash.  Oh how tasty hash is!  Bunch of fresh veggies tossed together to make a lovely plate of delicious, crisp, bright flavors.  This recipe takes it up a notch with the addition of vegetarian chorizo.  The spicy chorizo (Mexican chorizo is spicy) is a great complement to the veggies’ sweetness.  This dish is a little bit sweet a little bit spicy and a whole lot flavorful.  Add an egg on top and breakfast/lunch/dinner is served.  Nuff said! What are good Saturday morning breakfast ideas while trying to decide whether to face the cold, rainy, foggy world or stay indoors wrapped up in a blanket?  Two favorite options of mine: Huevos Rancheros and Eggs Florentine.  Two distinct dishes, both very tasty treats.  But you shouldn’t eat both at the same time, right?  Well maybe you should.  Hmmm.  I decided to combine the two and create one egg dish filled with hints of both. Spinachy Green Chilaquiles

Regulation chilaquiles consist of tortillas (or chips), eggs, salsa and cheese.  A Mexican breakfast staple I prefer mine for dinner.  My version is not as heavy with the addition of spinach and roasted red peppers to balance out the eggs and fried chips.  Who can resist spinach, roasted reds and eggs smothered in tangy tomatillo salsa and slightly salty Oaxaca cheese?
